Sometimes you have layout your uv map neatly. Then shit happen, such as a vertex merge together. And the uv map ruin. You can fix this without unwrapping all mesh and rearrange everything.
Do:
Fix the vertex.
On the uv map, select all vertices.
Pin them. UVs> Pin. or press P
Select the vertices you have fixed.
Unpin them. UVs > unpin. or press ALT+P
Select all vertices
Unwrap again.
Only the vertices you didn't pin will be updated.
